Most people think to add mint to a tall glass of iced tea to indulge in the cool satisfaction of this medicinal herb. However, The General Gazette recently stumbled upon a hot potato salad recipe that includes mint for a refreshing, innovative recipe that will add a little spark to your summertime meal.
Here is what you will need:
- 1 pound Yukon gold potatoes, whole
- 1 small yellow onion, chopped
- ¼ cup extra virgin olive oil
- 1 tbsp yellow mustard
- 2 tbsp lemon juice – about one small lemon or ½ of a large lemon
- A handful of fresh mint, thinly sliced
- Sea salt
Steam the potatoes whole until soft enough to pierce easily with a fork. Remove from steamer and cut into slices while still hot and season with the sea salt. Next add the onions. Mix the extra virgin olive oil, yellow mustard and lemon juice together in a separate bowl, whisking thoroughly.
Combine the dressing and the potato/onion mixture. Lastly, add the fresh mint and toss to evenly distribute.
Even though this is a hot potato salad, the combination of the lemon juice and the mint make it a refreshing side dish to go along with your usual backyard picnic foods like fried chicken, corn-on-the-cob, and lemonade.
